Tuna & Rice Dinner

This is a easy dinner that everyone will love.



Ingredients


2 cups of Brown or white rice ( 10 min )

4 eggs

2 cans of tuna

1/2 cup of red onion

1/2 cup of frozen peas

1 tea spoon of black pepper

a dash of salt

1 table spoon olive oil



Prepare


While you are cooking the rice add the 1/2 cup of peas to the rice and continue to cook the rice. While the rice is cooking dice up the red onion then add them into a frying pan with 1 table spoon of olive oil until the onions are a light red shade. In a mixing bowl crack all 4 eggs in bowl then add 1 teaspoon of black pepper and a dash of salt then use a whisk to blend it together add the 2 cans of drained tuna into the bowl with the eggs and mix the tuna with the eggs. Drain the rice and peas then add the onions and tuna , eggs into the same cooking pot and mix it all together then cook on medium heat for about 15 mins or till all the egg is cooked keep stir the pot then enjoy.


With this dinner I cut up some fresh vegetables on the side

Cucumber, Celery, tomatoes, carrots. I always pour some soy sauce on mine.


When I'm feeding my little ones I just give them the rice & Peas with some vegetables.
